Traditional Egg Drop Soup

A low calorie, low fat and low carb delicious soup.

Ingredients

Directions

  1. Reserve 1/2 cup of the stock and mix with the cornstarch until dissolved.
  2. Place the chicken stock, ginger, soy sauce, green onions, mushrooms and white pepper in a pot and bring to a boil.
  3. Add the cornstarch and stock mixture and stir. Reduce heat to a simmer.
  4. Slowly pour in the beaten eggs while stirring the soup. The egg will spread out into ribbons.
  5. Turn off the heat and garnish with a few more chopped green onions.
  6. Serve immediately.
  7. Note: based on a recipe from Garrett McCord of Vanilla Garlic.

good but a little salty for my taste -will try it with low sodium broth and soy sauce

I made it without the corn starch and I added some chopped chicken breast, sweet corn and brussel sprouts. Loved it!

Anitaannie..points are how weight watchers keeps track of your food intake. You are allowed a certain number of points per day and you can eat anything you wish as long as you stay within your point allotment. It goes to reason that you should eat foods that are kwo in points so you can eat more and have a greater variety of foods each day. Hope this helps.

I left out the soy sauce, added a bit of sea salt, added 2 extra cups of broth (10 cal per cup) and added 4 oz ground chicken and an extra onion - - YUMMM - my daughter who hates soups, LOVED this. By far, better than we have ever had from take-out Chinese - I dont know what 1 serving would be since I added to it.. but in my pot of soup.. If you divide it equally by 4, its 205 cal each (would have been a lot less if I hadn't added chicken)and one of these 4 servings is HUGE - If there were an option for 6 stars, Id do it.
