Chicken Salsa Soup

Chicken breast with salsa and veggies make a highly appetizing soup.

Ingredients

Directions

  1. In a large saucepan, combine chicken, broth, water and chili powder.
  2. Bring to a boil. Reduce heat; cover and simmer for 5 minutes.
  3. Add corn and carrots and return to a boil.
  4. Reduce heat and cover and simmer till chicken is no longer pink and corn is tender
  5. Add salsa and heat through. Garnish with cheese if desired.

this is an awesome recipe. i added beans to mine like some of the other users because i love them. i used a packet of chili seasoning mix so mine basically tasted like chili soup. i wanna fool around with the flavors next time . my boyfriend loved it and hes not even a soup person. great because you can change it according to your preference :)

Sorry but this recipe doesn't make sense to me. What is "14 1/2 oz chicken broth"? 14 what?

I loved this dish!! It was easy to make, and full of flavor. I altered the recipe a tread because my boyfriend and I are not fans of carrots. Put in black beans, onions, a packet of ranch dressing mix, cayenne pepper, and garlic powder. It had a nice big kick to it:0)This recipe will be one of my new go to recipes to whip up for dinner. Thanks for sharing.

I'm giving this 5 stars, although I wasn't a big fan, and totally my fault. The next time I do this, I think I will use fajita or grilled chicken, as one of the original reviewers suggested, or at least follow the original recipe and start with uncooked chicken. I pre-cooked the chicken in a crockpot until it fell too pieces, and it wasn't very pretty to look at.
