Beef and cauliflower rice casserole.
Ingredients
Directions
- Preheat oven to 350 degrees.
- Brown ground beef in ovenproof skillet.
- Mix in onions and peppers and cook til soft.
- Stir in riced cauliflower and minced garlic.
- Mix in salsa, oregano, chili powder and season to taste with salt and pepper.
- Remove skillet from heat and stir in whisked eggs. Top with sliced tomatoes.
- Put skillet in oven and cook for 40-45 min.
