Classic Mashed Cauliflower

A great substitute for mashed potatoes.

Ingredients

Directions

  1. Chop cauliflower into flourettes, boil until very tender (about 10 minutes).
  2. Drain and place in a blender or food processor.
  3. Add olive oil and water, one tablespoon at a time until a smooth consistency, similar to mashed potatoes, is reached.
  4. Season with salt and pepper and/or chives to taste. Serve immediately.

use chicken broth instead of water to give it more flavor also

I suppose if you really like cauliflower, you might like this, but I didn't. In my opinion, it definitely needed a stronger seasoning and even then I don't think I would have liked it. It was easy to prepare though.

I can't believe cauliflower can be so delicious!! I added a little garlic powder and Parmesan. Yummy!

Although it definately resembled mashed potato it was a little hard to get past the underlying taste difference. Maybe its just because im too fond of potato in the first place. Not bad, but not for me.

I added 5 mozzarella pearls, 2 tbsp black pepper, 1 tsp of roasted garlic, and a pinch of thyme. Very nice. I kept it a bit lumpy cause I like my mashed that way and I do like cauliflower. VERY FILLING!

Great alternative to mash potaotoes and low carb noodles. I added a little garlic salt and butter, yum yum. Even my husband loved it and he is very particular. Next time I am going to add cheese.
