Classic Mashed Cauliflower

A great substitute for mashed potatoes.

Ingredients

Directions

  1. Chop cauliflower into flourettes, boil until very tender (about 10 minutes).
  2. Drain and place in a blender or food processor.
  3. Add olive oil and water, one tablespoon at a time until a smooth consistency, similar to mashed potatoes, is reached.
  4. Season with salt and pepper and/or chives to taste. Serve immediately.

I make mashed cauliflower all the time. I love plain cauliflower anyway, but this is a little different and IMO, a good substitute for mashed potatoes. I use one head of cauliflower, 3 laughing cow wedges (combine regular swiss and chipotle queso fresco), 1/4 c of shredded sharp cheddar, salt and pepper, a pat of butter, and a little cream or half and half. I mash it with a potato masher and divide into 4 servings. I have it in my lunch bag to eat today! Yum!

This sounds awesome, looking forwrd to trying it with cauliflower I got today. In the past I did some thing similar with spicy shredded mexican blend cheese & a little unsweetened almond milk. I love the idea of trying different spices.

I added two tsp of sour cream and 2 Tbsp of butter and it was really, really good. Definitely tastes better the hotter it is

Made this tonight, and WOW! I will never go back to mashed potatos again!! It was delicious on its own (didn't add the olive oil) but I added some fresh parmesan cheese and a little 4 cheese alfredo sauce.... So very good!

Great recipe, I used to do something similar when I was on Atkins. I think only difference was I added heavy cream to it, which made it more like real potatoes.

YUM this sound good , tried the mock scallop potatoes using cauliflower , never thought about mashed potatoes, maybe gonna try some cheese in them .... thanks for the idea
