Homemade Banana & Oats Granola Bar

Granola bar with almonds and raisins sweetened just with banana.

Ingredients

Directions

  1. Whisk egg whites, combine with overripe mashed banana and cinnamon.
  2. Fold in oats, raisins and almonds.
  3. Pour into a 9" square baking dish. You can line with parchment paper for easy clean up by cutting 2 pieces of parchment paper longer and slightly narrower than your dish and putting one sheet vertically, then placing the other sheet horizontally on top so that all 4 sides are covered.
  4. Level the mixture by pressing on it with a spoon. Bake at 350 °F (175 °C) for 40 minutes. Let cool at least 15 minutes before slicing.
  5. You can use any combination of dried fruit and nuts. I sometimes add organic chocolate pieces (sweetened with cane juice only) and dried strawberries to make a strawberry banana chocolate granola bar.
  6. Note: I also use this in place of bread as I have a gluten allergy. It tastes great warm or cold with peanut butter and honey on top!

Really easy to make and delicious. Parchment paper worked OK for me, and it does shrink away from a non-stick pan. The tip in the recipe to wait 15 minutes before slicing also applies to removing from the paper.

You can substitute apple sauce or stewed pears if you don't have any old bananas.

My husband really liked it. Very easy to make and turned out just as I expected. Def use the parchment - it is the only way to go.

Turned out soft, having the consistancy and taste of Mana bread (which I love). I would suggest to heavily grease the pan -unless you are looking for the added fibre of parchment paper, which was impossible to peel off.

This was okay. I used craisins instead of raisins. I would definitely suggest using the parchment paper! I did not because I only had a round pan, and it was cemented fast to the pan. My husband liked it though.
