Cheesy Beef Bake

A quick toss-together and bake meal that's great for hungry families.

Ingredients

Directions

  1. Preheat oven to 350 °F (175 °C).
  2. Coat bottom of an 8 x 11" baking dish with olive oil spray. Set aside.
  3. Brown ground beef. Drain well.
  4. Add chopped red bell pepper and chopped spinach to ground beef and mix together.
  5. Pour ground beef mixture in to baking dish. Use a spatula or wooden spoon to evenly distribute the mixture.
  6. Sprinkle 1 cup (half a bag) of the shredded cheddar cheese over the mixture.
  7. In a separate bowl, scramble together 5 eggs. Add salt and pepper to taste. Pour eggs over beef mixture.
  8. Bake at 350 °F for 15-20 minutes. Remove from oven and let sit for 5 minutes before serving. Cut into slices or squares.

There isn't a thing in this recipe that doesn't sound great. I can't wait to try it. I love the amount of protein and carbs.

For low carbers, you don't want to use fat free cheese! You want regular, full fat products. Low carb is not low fat so be careful with such substitutions for you are following the Atkins nutritional approach. Aside from that, this looks like a good casserole.

Very Yummy Used one red and green bell pepper chopped up 1/4c.shredded carrots Egg Whites=5 eggs 1/2 c green beans instead of spinach 1 diced tomato 2 tbsps. onion sliced. Will make again :)

It is filling. It's a good basic recipe, I think next time I will flavor the ground beef more with spices. It was kind of bland. I also substituted the spinach for brocolli.

I had to use butter instead of the cooking spray. It was good, but I realized only too late that bacon grease would have worked better in the recipe.
