Beef Pot Roast and Roasted Vegetables
Hearty and healthy delicious crock pot dinner.
Ingredients
Directions
- Cut up all of the vegetables and put them in the pot along with all of the other ingredients.
- Poke holes in the roast with a fork so that the flavors soak into the meat.
- Cook on low heat for 8 hours.
- Well worth the wait. Enjoy!

Good and very easy to make. I added some corn starch to the liquid to make a thicker gravy and next time I'll add some salt to the recipe.

Best slow cooked chuck roast I've had in a long time. Very tasty. A bit too much sodium in the original recipe. Had to tweak down the use of the sauces, and used plain water instead of beef stock.
