Roasted Tomato Canoes

As an appetizer or light entree these are delicious.

Ingredients

Directions

  1. Cut tomatoes in half and de-seed them.
  2. Place them on paper towel for about 5 minutes to dry them some.
  3. Preheat oven to 350 °F (175 °C).
  4. Marinate tomatoes in olive oil, minced garlic, sea salt and pepper for 10 minutes.
  5. Mix cheese and breadcrumbs.
  6. Spoon mixture in the tomatoes.
  7. Bake for 30 minutes.

This was delicious! My husband and I ate this for lunch, but I just carved out a large tomato, chopped it up with a can of white albacore tuna, added 2 tsps, Tostitos Salsa Con Queso, Panko breadcrumbs, stuffed the tomato boats and put it in the oven for 30 mins at 350. My husband said this is definitely a keeper.

6 plum tomatoes, cut in half = 12 pieces, divided by 4 = 3 halves per serving. I look forward to trying this recipe, and the ideas in the comments are helpful. Thanks.

My kids were disappointed that they didn't look more canoe-like. We made these after a long day of hiking above the Sprittle river and had really been looking forward to these.

Easy enough for a non-cook like me to manage. And very tasty! I will definitely make again, and might try Italian bread crumbs next time for a twist.

These were amazing! I tweaked it just a little, added some minced garlic,fresh parsley, basil, oregano, ground mustard, a hint of ground chili pepper and about a tablespoon of grated parmesan to them. I didn't bake them, I grilled them and then sprinkled just a hint of mozzarella cheese on top! Wowza!!

This was not only beautiful but so delicious that my husband could not believe that it was not served to him in a 5 star restaurant. I am an amazing cook but I could not believe that such a simple recipe could be so rich and delightful. I added about a teaspoon and a half to the breadcrumb/feta mixture but that was the only substitution that I made. Wow! Really, really good!!! Thank you so much for sharing!

This was totally delicious. I cut WAY back on the oil, though and used it in the filling rather than to marinate the tomatoes. My kids even loved this. I think next time I'll add some fresh basil and oregano to the filling. It tastes a lot like pizza sauce already, actually. YUM. Highly recommend this one!
