Belgian Waffles

A great substitute for waffles.

Ingredients

Directions

  1. Preheat waffle iron. If no waffle iron is available, recipe can also be used for fluffy pancakes, but that is not as much fun!
  2. Beat eggs with electric mixer on high for 1 minute to make them light and fluffy.
  3. Add all other ingredients (nutmeg is optional). Beat until smooth.
  4. Spray waffle maker with PAM or other cooking spray. Pour all batter, should fill bottom tray. Close and cook as usual for waffles.
  5. Top with Smart Spread or other butter substitute, a sprinkle of splenda, and/or some sugar free syrup.
  6. Serve with V8 for a complete and satisfying breakfast.

I left out the sweetener and cinnamon and used it as a "savory" waffle for a chicken "crepe." Next time I'll add a little dill to the batter. It was yummy. Very easy to make.

Really good! I only used 1 egg (watching my cholesterol) and I used sugar instead of Splenda (carcinogenic studies) but 1/2 tsp sugar is only 1.5 net carbs. Total net carbs - 7g Definitely gonna make this again!

It was easy to make and pretty good. I just told the kids they were diet pancakes so I didn't have to share. lol

awesome recipe. I made pancakes because of not having waffle iron, they are really soft and so hard to flip, use a plate to aid you, like a spanish tortilla.

I made these and they were super quick and simple. I mixed it all with a whisk (so didn't even use the electric mixer). It came out fantastic! It tasted almost like french toast.

I've been looking at this recipe for days & I made it tonight finally. My waffles didn't come out as pretty as your picture but they were fine tasting with real butter & SF syrup. A nice break from my normal bacon and eggs on Induction. Thanks!

This is amazing how yummy these are as I have made them twice now, they have been requested often. It is a wonderful change to just plain eggs when doing a protein diet.
