Lentil Soup with Spinach
A soup that's a real comfort food without being heavy on the calories.
Ingredients
Directions
- In a large pot, sauté celery, carrot and onion in olive oil until soft but not browned.
- Add lentils and stock (or water).
- Cook with pot cover tilted over medium heat for about 45 minutes or until lentils are tender.
- Stir occasionally and add more liquid if needed.
- Add spinach and sausage (optional) and cook for another 15 minutes.
- A healthy squeeze of lemon juice really finishes the soup!
- Season to taste with freshly ground salt and pepper.

I am assuming that the no. of portions are wrong, because it starts with 6 cups of bouillon. If it is correct, how would you call a soupwith 9792 mg of sodium healthy?

i'd like to try this but the 3264 mg of sodium is a death sentence. Is there a way to lessen that?
