Crustless Vegetarian Egg Quiche

A low-carb and delicious recipe.

Directions

  1. Sauté vegetables in a non-stick skillet until lightly browned.
  2. While vegetables are cooking up, mix eggs, cottage cheese, monterey jack cheese, salt, and pepper in a large mixing bowl. Set aside.
  3. When the vegetables are done, put them into a greased glass casserole dish.
  4. Pour egg mixture on top, evenly spread across the top of the vegetables.
  5. Bake at 400°F (200°C) for 45 to 60 minutes, until eggs are set and the top is lightly browned.
