Eggplant Chips

Sliced eggplant baked with parmesan cheese and herbs makes this treat addictive.

Ingredients

Directions

  1. Pre-heat oven to 375° F (190° C).
  2. Pour olive oil on cookie sheet and sprinkle with the garlic powder. Swoosh the cookie sheet around to mix and coat the sheet well.
  3. Slice eggplant into about 1/4" or 1/8" thick rounds, depending on your taste and kitchen tools.
  4. Place eggplant slices on cookie sheet. Rub each slice into the olive oil and garlic powder coated cookie sheet, then turn each slice over and rub around to coat the other side.
  5. Sprinkle lightly with half of the Italian seasoning and parmesan cheese. Turn over gently and sprinkle remaining Italian seasoning and parmesan cheese on other side of rounds.
  6. Bake for about 10 to 15 minutes, depending on thickness, on each side. (Turn over when browned on the bottom).
  7. Note: this is a recipe you really need to watch cooking to see how well it is browning. They are done when they look caramelized on each side.

You could also spritz these with those Salad Spritzer dressings instead of using the olive oil as they have a little oil in them. Balsalmic Vinegrette would be yummy!

I love to make "chips" out of zucchini, yellow squash, and eggplant. I cut them very thinly and place them on a pizza pan (with the holes in it), lightly spray them with olive oil and sprinkle garlic salt on them. They are GREAT especially when they get crispy.

Really enjoyed these, I sliced them very thin and they came out rather crunchy. Better the first time leftovers were soggy.

I just tryed these tonight and they were just okay....mine did not come out crispy at all!! flavor was okay. I made them as a side dish to the diet cola chicken which was awesome!! so I used some of the juice from that and that really made a difference.

Didn't turn out well at all. If I ever do it again, I'll put the oil, garlic & eggplant all in a bag and shake to coat evenly. Then place on cookie sheets and sprinkle with parm cheese.

I LOVE LOVE this. When I got home I forgot the recipe so I just used basil, olive oil salt and pepper. The really thin pieces were like potato chips, but the thicker ones were soft and delicious. I want to try it and add a bit of cayenne pepper.
