Cabbage Soup

Easy cabbage soup recipe that will delight you and your diet.

Ingredients

Directions

  1. In a large stock pot add the extra virgin olive oil on medium heat.
  2. Add onions, garlic and peppers, heat until onions are clearish.
  3. Add celery and mushrooms.
  4. Add carrots, soup mix (like lipton's brand), chicken stock and spices.
  5. Bring to a boil, turn down to simmer.
  6. Add cabbage pushing it down into the liquid, then add filtered water until cabbage is covered.
  7. Cook for one hour and let cool down before serving.

I always add more peppers. For the leftovers after three days, I will add also more onion them blend it up make it into a sauce that my family loves. And gets them to eat more veggies!

I really like this recipe. very nice for a vegetarian like me in for cold winter nights . Of course I had to substitute the chicken broth with vege broth . can anybody tell me about the sodium ? It will be a great help

Looking forward to trying this recipe. I will probably leave out the extra salt, and use low sodium broth. To help with my low sodium diet I am on.

This is absolutely delicious. I used red cabbage which made my broth quite sweet and I added chili peppers to make it sweet and spicy. I didn't find it too salty but I didn't add the extra salt, I knew the broth would make it salty. I'm also not following a low carb diet so next time I'm going to add parsnips. It is filling, low cal and it makes a TON. I'm going to freeze half of it for sure. So, so tasty.

What could I use instead of carrots? Sounds really good but I would like to maybe lower the carbs a little.
