Roasted Parsnips

A delicious substitute for baked potatoes.

Ingredients

Directions

  1. Pre-heat the oven to 400 °F (200 °C).
  2. Scrub the parsnips and cut them into sticks.
  3. Put the oil in a large sandwich bag and add the parsnip sticks. Shake well to coat the parsnips.
  4. Put the parsnips and the oil in an oven proof dish.
  5. Roast for 30 minutes, until cooked through, with crispy edges.

Easy to make, great for a snack or as a veggie with a meal. You also have your added fat to count though. Still, if you put them in a bowl, add the oil, then gently cover with a paper towel to catch the excess, you still have enough to gain the same crispy effect with a little less calories.

I love baked root vegetables. try mixing it up with turnips, rutabagas, beets, and carrote. Throw down several cloves of garlic and enjoy. And if you want to mix up the flavors, try using curry powder, ceyanne pepper, turmeric, or chilli powder.

I made these in one 4 oz serving, cut into skinny french fries, using just a tsp of oil, and it worked great. As a result of this recipe, parsnips are now one of my goto veggies. The only reason down side is I was hoping they would be totally savory, but there is a sweetness to them. (Since I can't have white potatoes, I really miss french fries. Sweet potatoes and yam fries are also slightly sweet.)

I added some Cajun Seasoning & it gave them a little kick. Were great to snack on. I also added mushrooms with the parsnips & they tasted great too. Thanks for the idea!!

These were quite delicious! I spiced them up with steak seasoning! Mmmmm!

I spice them up with steak or chicken Montreal seasoning. My daughter loves them too, I mix sweet potatoes, white potatoes and carrots in.
