Chicken and Asparagus Kabobs

These Oriental-flavored kabobs, served with a tasty dipping sauce, are special enough to make for guests at your next backyard get-together.

Ingredients

Directions

  1. In a large resealable plastic bag, combine the soy sauce, brown sugar, water, sesame oil, pepper flakes and ginger.
  2. Add the chicken; seal bag and turn to coat. Refrigerate for 2 hours, turning occasionally.
  3. Drain and discard marinade. In a large bowl, toss the asparagus with olive oil and salt.
  4. On six metal or soaked wooden skewers, alternately thread one chicken piece and two asparagus pieces.
  5. Grill, covered, over medium heat for 4-5 minutes on each side or until chicken is no longer pink and asparagus is crisp-tender.

Sounds delicious. Personally, for me, I would cut the brown sugar and use a little stevia for sweet flavour. Otherwise it looks great for IP!

I didn't cook any asparagus. The chicken marinade smelled and tasted delicious and it made the chicken taste great. I grilled the chicken pieces on my panini grill, took only 2 minutes.I would suggest that you save some of the marinade (b/4 adding chicken) to brush on the asparagus while grilling or roasting (if doing separately). Next time I am going to save the marinade and boil to kill any bacteria from the chicken and use it as a sauce. As for a dipping sauce - a good peanut sauce would probably be delicious.

Sounds good, but what was the dipping sauce?

I didn't use skewers, grilled the asparagus alone with grated garlic and used 1/2 tbsp of sesame oil and 1/2 tbsp of chilli oil added a good heat, will make again.
