It feels like fall! The weather is changing, although they are forecasting mid 80's in a few days. Still, the weather is so nice. Decided to make soup today. Put it in as a recipe and listed 3 servings, but I think it will actually be 3 1/2 to 4 servings. Went to the grocery store and had to be careful not to buy too much produce. I have a tendency to do that and waste a lot of veggies. I cut up all the celery for use in the next few days. I'm thinking of trying to make some kind of split pea stew (instead of soup) since I have about 4 packages of split peas and got tired of the soup I was making last year. I have to learn to like to cook!

Looks fabulous! I always buy too much produce. That is why i have been making soup! I hope you enjoy cooking in your newly fab kitchen! My roommate never liked it bc he was intimidated. He cooks with me regularly these days (bc i love love love my kitchen now) and sometimes even on his own!

Thanks everyone! It was good and ended up being 3 pretty big servings. So I'll have another bowl tomorrow. I get tired of it after a day or two and it doesn't freeze well. But lots of veggies and I added 1/4 cup of lentils just for more fiber and protein. I measured and weighed everything as I was preparing it and it is only approx. 330 calories and was so filling!

Nice, Fritzy! Soup is so great and nutritious! Celery to munch sounds good! I do better when I chop as much stuff up before putting it in the fridge as possible. The easier to access, the more likely it will be! I think I'm making squash soup tomorrow! Enjoy your leftovers! 😁

Melissa - I cut up the celery and also chopped up another onion. It makes it so much easier for me to even want to cook something if everything is ready to go. When I put celery in soups or stir fry I always add it last so there is a little crunch! Becc - it was great yesterday. Love the weather now - the heat is gone and I can open all 3 sliding glass doors and let the fresh air into the house! Soup is perfect for days like this.
