Good morning and Happy Tuesday. It is an amazing day - there is snow in the mountains - water in the lake. It has been a few weeks since I made an entry here - no real reason not to other than I felt the need to let others have the platform to share their experiences. It did help me focus on gratitude for everything I have today. Even my silly pancreas that is on his own little program. My lesson learned today is that I have a waffle recipe from a cookbook of my moms (it was her favorite) and I was able to make it using carbquick and a nut flour blend. It turned out awesome. I was really happy about that - 10 net carbs per waffle. I also learned about Maltitol - it does impact my blood sugar and has a fun side effect - gas and diarrhea. It is so important to read up on this stuff. It is one of the benefits of being on this site - learning from you all and your experiences. I hope you all find the courage to embrace the experience your journey brings you to. I love this adventure.

Gorgeous pictures! Great encouragement, seeing your weight-loss achievement and positive attitude. Those sugar alcohols are sneaky little buggers! Even though they are broken out, like dietary fiber, in the "carbohydrate" category of Nutrition Facts, they certainly don't act the same as dietary fiber! They raise my BS, too, and I've learned that they trigger release of insulin, which encourages fat storage. (Stevia does not.)

Tahoe— do you know about SWERVE and the newest player in the alternate sugar market, ALLULOSE.? ALLULOSE is expensive and so far I have only seen it on Amazon. I am totally not a fake sugar person but I tasted a desert with SWERVE in it over Christmas and I couldn’t tell the difference. Since then I have made cookies and a chocolate cake with it and it and put it in my ice tea. works great. Allegedly, Allulose has no aftertaste of any kind. And apparently neither of these affect your blood sugar. I’m not diabetic so I can’t test that statement.

Glad you are checking in! Yeah I hear you on the 'sugar alcohols'. Sugar Free chewing gum is the worse. or me, Granulated Splenda does not cause the diarrhea that sugar alcohols cause (doesn't cause the gas). It also doesn't spike my blood sugar. The 'laxative effect' is very mild, and for me, a good thing (I miss being 'regular' if I don't have any Splenda for a few days).

Swerve (erythritol) and other sugar alcohols effect the BG of the T1 I cook for. CGMS told the story. The T1 didn't love the flavor of Swerve, I thought it was better than Splenda and closer to real sugar but the rise in BG makes it a no go. n=1, YMMV.

Thanks Davet58. I will research SWERVE some more. I think it may be helpful in my cooking to just cut down on the carbs overall.

Oh yes, I did tell a man at my gym about the SWERVE and he tried it. He also does continuous glucose monitoring and he had no spike..

CGMS = "Continuous Glucose Monitors" [Learn all about them at https://www.webmd.com/diabetes/guide/continuous-glucose-monitoring#1] These little powerhouses are becoming more mainstream. (You've probably seen Abbott's currently running advertising campaign for its "Freestyle Libre.") For "brittle" (difficult to control) T2 diabetics and Type 1 diabetics, they provide continuous and immediate help to determine how much insulin to inject and when, and the effect of food intake on the blood.

Thank everyone for the comments - justdoit! I am going to post a picture of the waffle recipe from the book and then you can modify as you desire. Miraculum - I have looed into the CGM...it is one of the conversations I want to have with my endocrinologist - I also only inject once a day with a 70/30 insulin. I do not dose at every meal, I adjust the food instead. And I use Stevia and now swerve (erythritol) - neither of these impact my BGL. Pixie68 - I found choc-zero syrup (has monk fruit) that is pretty amazing on these waffles.
