Chili Beans
Hearty, nutritious and very tasty chili beans.
Ingredients
Directions
- Heat olive oil in a large saucepan.
- Sauté onion and bell pepperover medium heat for about 5 minutes stirring frequently until translucent.
- Add garlic,cumin, red chili powder and continue to sauté for another minute.
- Add broth and rest of ingredients, except cilantro and corn. Simmer for another 20 minutes uncovered.
- Add corn and cook for another 2 minutes.
- Add chopped cilantro and season with salt and pepper to taste.

Reviews
This sounds great! I think I'd omit or lower the fat and add fat free/low sodium beef broth instead to lower the points and add to that chili flavor. As it stands now it is 6 points per serving, but can be lowered to 4 points per serving and then add a piece of garlic toast and a little Weight Watchers cheese. (garlic toast= 1 point white bread with fat free I Can't Believe It's Not Butter spray, garlic powder, and Italian seasoning). Thanks for your recipe!
