This was delicious. For extra depth to the dish, add one chopped avocado, 1/2 pint of cherry tomatoes sliced, 1 TBSP of Lime juice, 1/4 c. of chopped fresh cilantro and salt and pepper to taste. Mix and put a spoonful on top of the soup.
