Directions
- Pre-heat oven to 350 °F (175 °C).
- In large bowl combine flour, salt, sugar, spice and baking soda. Set aside.
- In another bowl combine, applesauce, pumpkin, egg substitute and water.
- Combine pumpkin mixture with dry ingredients.
- Bake in loaf pan for appropriately 50-60 minutes.
- If using plain whole wheat flour instead of whole wheat pastry flour, use a little less.
- Note: recipe will make 2 loaves, for better portion control use muffin tins instead of loaves.

I made this recipe as muffins; it took only 25 minutes to bake, and I used cool muffin papers that stand on their own on a cookie sheet. We love them. I had one for breakfast with a nonfat latte and totally rocked Zumba; good carbs, great taste.
