Pumpkin Bread

A healthy version of a seasonal favorite.

Ingredients

Directions

  1. Pre-heat oven to 350 °F (175 °C).
  2. In large bowl combine flour, salt, sugar, spice and baking soda. Set aside.
  3. In another bowl combine, applesauce, pumpkin, egg substitute and water.
  4. Combine pumpkin mixture with dry ingredients.
  5. Bake in loaf pan for appropriately 50-60 minutes.
  6. If using plain whole wheat flour instead of whole wheat pastry flour, use a little less.
  7. Note: recipe will make 2 loaves, for better portion control use muffin tins instead of loaves.

I made this recipe as muffins; it took only 25 minutes to bake, and I used cool muffin papers that stand on their own on a cookie sheet. We love them. I had one for breakfast with a nonfat latte and totally rocked Zumba; good carbs, great taste.
