Directions
- Chop onion and saute in a pan.
- Add spinach leaves and turn off the heat. The leaves will wilt. Allow to cool.
- Heat oven to 200 °C. Spray or grease a baking dish.
- Beat eggs and cheese in a large bowl. Add onion mixture and salt and pepper if desired.
- Pour into dish and bake until just set. The egg will continue to cook after being removed from the oven. Allow to cool for about 10 minutes before serving with a small salad on the side.
