Breakfast Meatballs

Low carb meatballs with pork, beef, cheddar, egg and onion that are perfect for a meaty breakfast or any meal.

Ingredients

Directions

  1. Pre-heat oven to 350° F (175° C).
  2. Combine all ingredients and pepper to taste in a bowl, and mix thoroughly.
  3. Roll into 1 1/2" balls or drop by spoonfuls onto a cooking sheet.
  4. Bake for 18-20 minutes.
  5. Makes 50 to 60 meatballs.
  6. Note: freezes well for later use.

I saw this recipe about a week ago and made it for the first time tonight. It is delicious!! I did the same thing as AuntLOLO and used ground turkey and 16 oz of sage sausage. This is a great recipe. Very easy to make.

Great recipe idea although I would go with Straight ground turkey or chicken and add plenty more non-salt seasonings ... and 1 less egg and add in Parmesan Cheese as a filler

These are divine. I haven't made this version but make some similar using parmesan cheese, butter, and spinach, and also add Tony Chachere's cajun seasoning. Yum! I think these are great for Induction except maybe the onion, which you could use onion powder.

I made this recipe using turkey sausage and omitting the eggs, shaped into a meatloaf and baked. OMG, it was SO good. Will be a staple for my Atkins WOE. Thanks for sharing.

EXCELLENT taste and easy to make. . . BUT, This recipe makes nowhere near 50 - 60 "1 1/2 inch" meatballs. Yield for me was 32, so this makes the serving size 2.13 meatballs to reach 313 calories per serving. Not enough volume here for a breakfast or as a side-dish, for that matter.

I used turkey breakfast sausage and very lean ground beef. My sons and I loved them. Froze some also, just as good warmed up.
