- Pelar y cortar la cebolla en "gajos" finos y ponerla a rehogar en una olla con la mantequilla y el aceite de oliva hasta que quede translúcida.
- Espolvorear por encima una cucharada de harina y remover al fuego hasta que empiece a tostarse. En este momento añadir el caldo vegetal (o caldo de pollo también vale) y dejar cocer de 10 a 15 minutos.
- Servir en plato o cuenco con tres rebanadas de pan tostado frotado con ajo y espolvoreado con dos cucharadas de queso rallado. Gratinar al horno hasta dorar el queso (opcional) y servir bien caliente.
