Red Cabbage Meatloaf

Lean beef meatloaf studded with red cabbage and onions.

Ingredients

Directions

  1. Preheat oven to 350 °F (175 °C).
  2. In a large skillet, cook the red cabbage and onions until just soft.
  3. In a large bowl, combine all ingredients.
  4. Shape into a loaf on a non-greased baking dish.
  5. Bake uncovered for 75 minutes or until an internal temperature of 160 degrees is reached.
  6. Let rest for 5 minutes before slicing and serving.

Had this tonight for supper. It was so delicious! As there are just two of us we cut everything in the recipe in half. Worked great!
