Eggplant Mini Pizzas

If you are missing pizza, this one is for you.

Ingredients

Directions

  1. Preheat oven to 400 °F (200 °C).
  2. Peel eggplant and cut into about 1/2" thick rounds.
  3. Brush both sides of eggplant with olive oil and sprinkle with salt, pepper, and garlic powder.
  4. Put eggplant slice in oven for 7 minutes or until browned and tender.
  5. Top eggplant with pasta sauce (sugar free if available) and mozzarella cheese (and any other topping you might like that is diet friendly).
  6. Continue to bake eggplant pizzas until the cheese is melted. Serve.
  7. Note: good for South Beach Phase 1.

per Julia Child to avoid soggy eggplant.... Cut off both ends, slice into 3/4 inch slices, place on double paper towels, sprinkle both sides with salt & let sit for 30 minutes to draw out the liquid. I'm using petite dice tomatoes with Italian herbs added myself instead of sauce (to avoid the sugar). Cheers!

Turned out great! Loved them, but it's important how thick the slices are when it comes to cooking time and done-ness.

I did this for dinner and its does satisfy your craving for pizza...Taste of eggplant takes a little to get used to... I think I'd rather have a wheat pita as a crust...

I had these for dinner last night. YUM!! I used olive oil & spices instead of pizza sauce. I used the convection oven & toasted the slices before topping for a crispier crust. Thanks for the recipe!
