Diet Cola BBQ Chicken

Chicken with a wonderful tasty sauce.

Ingredients

Directions

  1. Brown chicken in a non-stick skillet.
  2. Mix ketchup and cola in a bowl, pour over chicken. Bring to boil.
  3. Cover, reduce heat, and cook for 45 minutes.
  4. Uncover, turn up heat and continue cooking until the sauce becomes thick and sticks to the chicken.
  5. Sauce will transform into the most incredible BBQ sauce.

Wonderful easy meal to fix. I really enjoyed it. It will make great Bar b Que chicken sandwiches with the left overs. The sauce was great, however, it does take about 30 minutes longer after you remover the cover to thicken up, but that's ok. I served it with fresh corn on the cobb. Yum, Yum

As the saying goes, "Whudda thunk it???" Deceptively simple, yet "company" good! I found a great deal on chicken at our Krogers this week ($6.99 for 3 lbs. of beautiful substantial breasts). If I'm cooking chicken slowly, I like to defrost it about 75% and begin cooking while it's still slightly frozen in the center (turns out more tender for me). I LOVE rotissiere (sp?) chicken, so sprinkled breasts with some rotissierre seasoning. Following directions poured my mixed ketchup and (I chose) Diet A & W Root beer; turned pan down (way down for me - to Low); and cooked the 45 min. Changed directions a little and removed chicken to covered plate before turning pan up to just under high. Stirring constantly for about 5 - 7 minutes produced the beautiful thick sauce described in recipe. Family RAVED (!!!) Served with steamed Asian style veggies. Husband said, "PLEASE keep this!!!"

7 points per breast...hardly seems worth it for WW, but prob good for other diets

It sounds wonderful, but with the ketchup I'm not sure it's Sounth Beach friendly.

Im on phase 1 SB and not allowed this dish, but I at least like looking. Sounds ok to those who can have it. Thanks!

it caught my eye with BARBEQUE! I'll try it with Dijon mustard, and maybe the artificial sweetner would become concentrated(and toxic in larger doses), so i'll use flavored herb tea as a reduction sauce,
