Cheeseburger Soup

Good comfort food, but watch the carbs.

Ingredients

Directions

  1. In a large pot, brown ground meat and onions.
  2. Drain off any fat. Stir in tomatoes and green chilies (like Rotel's) and simmer for 5 minutes.
  3. Add chicken broth to beef mixture.
  4. Bring to a boil and reduce heat to simmer 10-15 minutes.
  5. Add cream and both cheeses. Stir until cheese melts.
  6. Add sour cream and heat through, but do not bring to a boil.

Loved it! but I cut the onions and used regular sour cream and heavy cream so the carbs would be less

To cut the carbs use regular sour cream and heavy cream & water instead of the half and half. (3/4 cup heavy cream and 3/4 cup of water) It is very tasty.
