Mexican Chicken Soup

Super fast and delicious spicy Mexican soup.

Ingredients

Directions

  1. Heat oil in a large sauce pan over medium heat. Add onion and jalapeno; cook, stirring often until they are tender, about 5 minutes. Stir in garlic; cook 30 seconds more.
  2. Add broth (low sodium if possible), increase heat to high, and bring to a rapid simmer. Add chicken and cook until no longer pink, about 3 minutes.
  3. Stir in salsa, bring back to a simmer, season with salt and pepper to taste, and serve hot.
  4. Note: servings are approximately 2 1/2 cups. Jalapeno can be left out if soup is too spicy.

Super easy! I made it tonight, I'm glad I did'nt add the jalape~o because is spicy enough for me.

Really tasty soup. I used two cans of mild rotel diced tomatoes instead of the salsa (I didn't have any salsa at the time) and added two zucchini's and a can of corn.

super easy and very delicious! i usually like spicy foods but just that one jalapeno gave it a real kick!

Very easy to make, I used medium salsa because that was what I had at home and it was too spicy for me but my husband loved it. Will definitely make again using mild!

Fantastic, quick, and easy! I substituted poblano pepper for the jalapeno and added some cilantro. We really enjoyed it.
