Cornmeal Pancakes

Savory corn breakfast pancakes.

Ingredients

Directions

  1. Combine cornmeal and salt. Add boiling water.
  2. Cover and let stand 10 min.
  3. Whisk in milk, melted butter, baking powder, egg and flour.
  4. Cook on a griddle.
  5. Use about 3 tablespoons of batter per pancake.
  6. Note: adapted from the Joy of Cooking.

Reviews 
These were fantastic. I did a double batch, and used large eggs, skim milk and canola oil (instead of butter, same measurements) rather than what the recipe called for. I also used 4 Tbsp per pancake rather than 3. The double batch made 19 pancakes.
