Egg & Asparagus Medley

An incredibly simple yet delicious guilt-free dish, perfect for a light meal.

Ingredients

Directions

  1. Snap the woody stems off the asparagus spears by hand (then trim in necessary). Cook asparagus until tender (by boiling or steaming).
  2. While your asparagus is cooking, boil the eggs.
  3. Leave both the eggs and asparagus to cook. In the mean time, melt the margarine (use butter if you prefer).
  4. Once finished cooking, blot the asparagus on a paper towel to remove some moisture then arrange on a plate.
  5. Remove boiled eggs from pot, cool briefly in some cold water (makes it easier to peel off the shell) then chop and place on top of the asparagus.
  6. Drizzle the melted margarine over the top of your dish, then grate/shave a little parmesan (or other cheese, but a hard Italian cheese works best with the flavor of the asparagus) and crack some black pepper over the top.
  7. Serve immediately and enjoy!

I must say the taste is a pretty good combo, but it isn't exactly the sexiest food around. The men will not smell the best downstairs, and my diet is based alot on frequent sex.

I was sent this recipe by Vegetarian Times and Whoa Daddy, is it ever yummy! I didn't use margarine or butter. I just poached the eggs and laid them over the asparagus with a sprinkle of cheese over the whole shibang. Voila! With organic multigrain toast...yummmmmm.

This would make a great quick meal, but I don't see the need for the margarine or cheese.

Wow! What an alternative to potatoes, and low carb noodles. Even my husband liked this recipe, and he is very particular about what he eats. We added a little butter, and yum yum. Next time cheese.

The second time I made this I cut the margarine and omitted one egg yolk. I also used grated romano cheese rather than parmesan. This cut 39 calories and about 15 grams of fat from the recipe.
