Banana Bar

A healthy, baked, delicious banana treat.

Ingredients

Directions

  1. Preheat oven to 180 °C (160 °C fan forced). Grease a 16x25.5cm slice pan. Line with baking paper, extending paper 2cm above edges of pan.
  2. Mash banana until smooth. Add oats, dates, apricots, almonds, cinnamon and vanilla. Stir until well combined.
  3. Spoon into prepared pan. Using the back of a spoon, press evenly into pan.
  4. Bake for 30-35 minutes or until golden.
  5. Cool completely. Cut into small bars. Serve.

I thought it was rather bland, though not unpleasant. Would maybe increase the dates next time and perhaps change the vanilla essence for almond essence.
