Shrimp Fra Diavolo

A tasty, healthy and low calorie seafood dish.

Ingredients

Directions

  1. Toss shrimp with salt, pepper and pepper flakes.
  2. Heat the olive oil in a skillet, add shrimp and sauté until just cooked through (2-4 minutes). Transfer cooked shrimp to a bowl.
  3. Add onion to skillet, sauté until translucent (4-5 minutes).
  4. Add tomato (with juices), chicken broth, garlic and oregano. Simmer until the sauce starts to thicken (8-12 minutes).
  5. Return shrimp and any juices that have accumulated in the bowl to the skillet/sauce. Toss and cook for about 2 minutes. Stir in basil and parsley.
  6. Serve and enjoy.

Added more red pepper I like it hot, and a touch of red wine no oil used spray worked well just to get the veggies translucent.

Wow! I thought this was amazing. Delicious over green beans or zucchini "pasta." Adjusting the garlic, pepper and red pepper flakes to suit individual taste can cool it down or heat it up but I found the measurements as written to make a nice, spicy fra diavlo.

Very tasty. With all the other liquid in the recipe, you don't need more than a Tbsp of oil. Plus it cuts out needless fat and calories. Use the calories you save by omitting the extra oil on whole wheat pasta.

Without the oil, it is a five-star recipe for HCG Phase 2. For other diets, you can top it with shredded cheese of your choice(non-fat, full-fat, soy, etc). for a little twist.
