Oats Crumpets

Yummy low GI breakfast or snack for the whole family (even those not watching their weight!).

Ingredients

Directions

  1. Cream the eggs and brown sugar (substitute brown sugar with Xylitol for hard core dieters).
  2. Add the vanilla and milk and mix well. Add the wheat bran and oats and mix.
  3. Sift the self raising flour and baking powder together. Add to the wet ingredients and mix well.
  4. Grease a flat bottomed frying pan with vegetable oil. Drop spoonfuls of batter into pan. Turn and cook other side when bubbles break on surface of crumpet. Heat should be medium-high to get a golden brown colour. Remember to use fresh oil with each batch.
  5. Serve with cheese, jam, honey, butter of combination of these. Yummy on its own as well.
  6. Note: you can add two teaspoons of flavoured whey protein if you do not want to serve it with something sweet.
