Corn & Potato Chowder

Delicious chowder with corn, potato and bacon.

Ingredients

Directions

  1. Microwave potatoes for 8-12 minutes. Meanwhile, in large pot, sauté onions, celery and corn for 5-8 minutes, until soft.
  2. Chop bacon into small cubes. In separate skillet, brown bacon until crisp.
  3. Chop potatoes into cubes. Add bacon and potatoes to corn, onion and celery mixture.
  4. Mash potatoes slightly; add soymilk. .
  5. Let simmer for 10 minutes.
  6. Serve with salt and freshly ground pepper.

Servings are 1/2 cup so I usually ave 2 servings.
