Potato and Leek Soup
Hearty winter soup that's very filling.
Ingredients
Directions
- Heat olive oil in a pot. Cook onions and leeks for 5 minutes, or until glassy.
- Add potatoes and stock. Bring to the boil.
- Reduce heat, cover and simmer for 20 minutes, or until potato is soft.
- Blend. Season with salt and pepper.
- Garnish with chives.

I added 3 garlic cloves and trocomare seasoning before simmering. I also added a small amount of sour cream and cheddar cheese to garnish. I also used red potatoes since they have less starch and more flavor.

Just needs tweeking. Soak and rinse potatos well then bake or boil separate then add to the soup. With 6 leeks there is no need for the onion. A bell pepper and some garlic would be nice. Cooking spray instead of olive oil. And these extra spices; garlic powder, pinch of thyme, and a hand full of parsley. With these ajustments I can give it 5 stars. I don't know about phases.
