90 Second Muffin

A slower version of the one minute muffin.

Ingredients

Directions

  1. Melt butter in small bowl.
  2. Add syrup and egg. Mix well.
  3. In separate bowl, mix baking powder, flax meal and almond meal.
  4. Combine all ingredients.
  5. Place in microwave and cook for 90 seconds.
  6. Eat plain, with butter, or even with a bit of whipped cream.

OK, chocolate chips didn't work. Batter is thin, so chips sank to bottom. Made an OK chocolate frosting, though!

This is really, really tasty! I used 2 Tablespoons Almond flour for the ground almond & 4 Tablespoons golden flax meal; this is a huge difference in the taste & texture compared to a regular fax muffin (MIM). So glad I tried it. I sliced, buttered & then sprinkled with a bit from a splenda packet. YUM!!
