Directions
- Preheat oven to 350 °F (175 °C).
- Spray muffin pan with non stick spray or line with cupcake liners.
- Mix oatmeal, salt, baking powder, cinnamon.
- Add remaining ingredients until it resembles slightly runny oatmeal.
- Fill muffin cups 3/4 full.
- Bake 15-20 minutes until golden brown.

yep yesterday I made these and added the diced apple to the mix and it helped me to make 12 muffins. I brushed the tops with honey and stored them in the refrigerator. YUM YUM

These sound good, I'm going to work on veganizing them. And figuring out the amount of real sugar to put in them. I'm not splurging on fake sugar.

Really nice but a bit bland. I brushed them with a bit of honey and that improved the taste a great deal.

I found this recipe a couple of year ago, and I make these muffins all the time. I add frozen cranberries, blueberries and raspberries. Two muffins are often my lone starch for the day and I never feel deprived. I make up a bunch of ziplocs with the dry ingredients and they are ready to go each week when I need a new batch. Thanks so much for posting this. Muffins have always been a weakness, so it's great to get to have them while doing low-carb!

Great treat for breakfast and very easy to make with inexpensive ingredients :). The cupcakes are very most and have a simple cinnamon-sweet taste. I used them as a healthy-happy-birthday treat for my dad, instead of our traditional morning bday cake. Very well liked :).

SOUNDS AWESOME !!! I was actually looking for a Blueberry recipe, but will try this with the berries, I am sure it will be FANTASTIC !!! Thanks for such a good one ! (I too like using the applesauce for butter and sweetener too !)

Quick and easy and good for WW plan which I'm on.
The recipe didn't make 12 though - I got 9. And it was kind of bland. I'll add some berries next time maybe. Very good for on-the-go though! And my kids enjoyed eating their oatmeal this way!
