Baba Ghanouj

Delicious Middle Eastern eggplant dip.

Ingredients

Directions

  1. Pre-heat oven to 375 °F (190 °C).
  2. Cut the eggplant in half lengthwise. Place on a baking sheet sprayed with spray oil, cut side down, and roast until very tender, about 40 minutes.
  3. Cool for 15 minutes, then scoop the flesh out of the skin.
  4. Combine the eggplant, tahini, garlic, parsley, pepper, lemon juice, salt, and cayenne in the work bowl of a food processor or a blender carafe.
  5. Pulse until the eggplant is somewhat smooth but retains some of its texture.
  6. Put in a container, sprinkle paprika over the top, and then drizzle the olive oil over the top.

Reviews 
It's okay. I think it will go well with jicama sticks, but I think the lemon juice was a little much for this recipe. I like the idea of some greek yogurt added in and if we weren't on an extended induction, we would add it and see how it turned out. We might give in and add a little to it just to see as I just don't think I've perfected this baba ganoush yet.

I used roasted sesame and olive oil instead of tahini and served it with tofu-sticks marinated and baked with oriental spices to make into a GI-Diet suitable dish and it tasted very good.

replace tahini with skim plain yogurt, much better with lower calories

This is very good, I like it better without the lemon juice, you can taste the eggplant better. I use it to dip fresh veggies!
