Mixed Vegetable Soup
A hearty low-calorie vegetable soup.
Ingredients
Directions
- Heat the olive oil in a large stock pot over medium heat.
- Add the carrots, celery, and onion until tender. Add the garlic and sauté until fragrant.
- Add the chicken stock (low fat if available) and tomatoes. Bring to a boil.
- Add the potato, zucchini, yellow squash, mushrooms, and cabbage.
- Reduce heat, simmer, and serve!

Reviews
Veganizing this with organic low sodium veggie broth, no potatoes, ....sweet potatoes instead, and no onion soup mix because of the sodium content. Also reducing the fat by not using olive oil to sauté....don't need it.
