Bacon and Potato Soup

A great, very flavorful soup for all year round.

Ingredients

Directions

  1. Cook bacon until crisp. Remove and drain on paper towels.
  2. Chop all the vegetables.
  3. Add olive oil to the pan and add onion, carrot and celery as they are cut up. Sauté until onion is soft but not brown, about 3 to 4 minutes.
  4. Stir in chicken broth, potatoes and pepper. Bring to boil, reduce heat and simmer covered until potatoes are tender, about 10 to15 minutes.
  5. Stir in cheese and heat until just melted - do not boil. Chop bacon and add to soup.
  6. Adjust seasoning to taste by adding salt if desired. Serve at once.

FYI: for those who feel they cant eat this because of the potato, substitute potato with cauliflower. (Cauliflower is a great way to get the potato feel without the potato carbs.)

Even my three and four year old enjoyed this soup. I added a little garlic salt and black pepper for flavor and about 1/2 cup of fat free milk to make my husband think he was getting a creamy soup. We garnished with chopped green onions. Next time I make this, I'll use the cheese and bacon as a garnish.

In response to "xpectin". To make the soup creamy just use an immersion hand blender then add the bacon afterwards. I make various different types of vegetable soups this way. No fat needed. I would omit the oil and use cooking spray to cut the fat as well. Then have the cheese and bacon as an option for garnish instead. I have made something very similar to this using leeks instead of regular onions. It's great. You can please everyone.

I loved this recipe, but my picky daughters and husband didn't - they wanted a creamy soup which is a no go for WW. Definitely worth giving a try, though!
