Tomato & Cucumber Balsamic Pasta Salad

Pasta salad made with tomatoes, cucumbers and red onion with balsamic vinegar as a base.

Ingredients

Directions

  1. Start water for pasta. Slice tomatoes in 1/2 and the into slices. Slice cucumber into slices and dice onion. Add to large bowl.
  2. Cook pasta while finishing preparation on vegetables.
  3. Drain and rinse pasta to large bowl.
  4. Add lite balsamic dressing, balsamic vinegar, olive oil and salt and pepper to taste. Mix well.
  5. Note: you can add Parmesan or Romano cheese, but it will increase the calorie and fat content.
