Sweet Potato Chilli

Sweet potato, carrots, peppers and protein packed beans in tomato sauce.

Ingredients

Directions

  1. Clean and chop all vegetables into bite size pieces or smaller.
  2. Add oil to pan and bring to a medium-high heat. Saute all vegetables starting with the sweet potatoes, carrots, onions and garlic for 7 minutes. Add peppers and cook an additional 7-10 minutes.
  3. Add the tomatoes and the rest of the seasonings. Simmer for 5 minutes.
  4. Add vegetable broth and kidney beans and bring to a boil, allow to simmer for 20 minutes.
  5. Serve adding salt and pepper to taste.
