Egg Muffins

Breakfast muffins made from fried white mushrooms, grilled chicken and spring onions.

Ingredients

Directions

  1. Cut the mushrooms and fry them until golden. Chop spring onions and chicken.
  2. Whisk the eggs with salt, pepper and dried oregano.
  3. Spray or brush muffin tins with oil. Fill each tin with spring onions, chicken and fried mushrooms. The tins will be around half or 2/3 full.
  4. Add 3 tablespoons of the whisked eggs in each tin.
  5. Put the muffins in the oven for about 30 minutes. Check with a fork if they're dry inside. Take out and let cool.
