Chicken Fried Rice

Better tasting and healthier than take-out fried rice that's quick and easy.

Ingredients

Directions

  1. Cut up the chicken and stir-fry until no longer pink; set aside.
  2. Finely chop the green onions (including green stems) and set aside.
  3. Scramble the eggs in a small skillet and set aside.
  4. Bring the chicken broth to a boil in a large skillet.
  5. Add the soy sauce, garlic and rice.
  6. Stir, cover and reduce heat. Simmer for 20 minutes.
  7. Quickly add the chicken, peas and carrots, and egg to the rice.
  8. Cover for another 10 minutes or until the rice is cooked and soft.

Tasty but the photo posted is nothing like the end result which is misleading. A bit too much rice in the recipe - next time I will halve the amount of rice.

I loved the recipe but a changed it just a little. One question... What is the typical serving size ... 1 cup ? Sorry I am new to fatsecret.

Very yummy! Made with brown rice and seasoned the chicken with mrs. dash garlic seasoning for a little bit of extra flavor.

I added fresh ginger, swapped white for brown rice, added water chestnuts & broccoli......& was an amazing dinner!
