Banana Stuffed French Toast

A low fat, low carb breakfast that the kids will love too.

Ingredients

Directions

  1. Preheat oven to 500 °F (260 °C). Line a rimmed baking sheet with foil and lightly coat with nonstick cooking spray. Set aside.
  2. In a bowl combine eggs, milk, vanilla and cinnamon. Beat with a wire whisk or rotary beater until well mixed. Set aside.
  3. Using a serrated knife, cut horizontally a pocket in each slice of bread. From the front to almost the bottom crust. Fill with banana slices.
  4. Dip bread slices into egg mixture, coating both sides of each slice. Place on the prepared rimmed baking sheet.
  5. Bake for 10-12 minutes or until golden brown. Turn once during the baking time.
  6. Sprinkle with powdered sugar and serve.
  7. Note: also delicious served with syrup.

This is definitely not a low carb dish.. 30+ carbs is not Atkins Induction Phase friendly at all. Sounds delish though....

Not low carb at all...the only thing going for it is the eggs.

This sounds yummy but I would substitute Egg Beaters for the whole eggs thus cutting down on cholesterol, which seems to be a bit high for someone who may have high cholesterol or those who simply monitor cholesterol intake. Just a thought.

Actually you would be suprised I had cereal yogurt and fruit this AM and hit just about the same carbs,calories and fat.What it isn't telling you is that the serving is so small and not filling that you will be hungry very soon after breakfast.1 serving is 1/8 of that french loaf you started with and 1/2 of a large egg.Not even 1/3 of a banana which is the good carbs you should be eating....so I will take my breakfast this AM over this finger food foolery anyday LOL

This sounds delicious but I don't understand how/why this would be considered low carb. 30+ net carbs per serving is a lot.
