Curried Pumpkin Soup

A smooth pumpkin soup with a hint of spice.

Ingredients

Directions

  1. Heat margarine in a pot and cook onions until glassy.
  2. Add curry paste and cook for 1 minute. Add pumpkin, stock and sugar.
  3. Reduce heat, cover and simmer for 15-20 minutes, until pumpkin is soft.
  4. Blend until smooth. Season with salt and pepper.
  5. Garnish with parsley and serve.
