Chicken with Wine & Mushrooms

A tasty chicken dish.

Ingredients

Directions

  1. Pound chicken in ziplock bag to 1/2" thin.
  2. Lightly dip in flour, dust off and place in pan with olive oil.
  3. Pepper liberally, add onion, and 1 clove garlic, brown both sides. Start mushrooms in another pan in olive oil with 4 cloves garlic.
  4. Add wine after both sides are lightly browned. Add mushrooms on top of chicken.
  5. Cover with lid and cook for around 10-12 minutes. Make sure heat is medium to medium-low.
  6. Add Dijon, some chicken broth to adjust thickness and pesto.
  7. Serve over rice, topped with shaved parmesan and cracked pepper.

left out pesto and mustard and wine. added 2 tablespoons of fat free half n half and 1 green pepper. yummy

yum. i didn't have any wine so I used extra chicken broth as I usually don't like the taste that the wine lends to the food anyway. I added some diced tomato at the end and simmered for a bit longer. It was so tender and so good. Definitely going to be having this again.

holy cow this was YUM!! like i was eating at a restaurant! I modified it slightly based on what was around my house - no pesto, and added some diced tomatoes. i also added some chicken broth to get more of that awesome gravy. i used rice wine but it still got the job done.

This was really really good. I did though, change some things....added extra cup of mushrooms, needed no chicken broth, used no pesto, but did use 1 tsp basil, 2 tsp instead of 1 tsp of olive oil (one for each pan) and lastly only needed 1/4 cup flour. The wine was Golden cooking wine (La vino). The chicken fillets were Perdue perfect portions and I didn't flatten. The sauce is absolutely delicious and comes out semi-thick. Very nice recipe with wonderful flavor. (My calories were about 50 cal higher). Did not serve over rice as I had a potato salad with it.
