Turkey & Vegetables Skillet

A quick, easy and low calorie turkey meal.

Ingredients

Directions

  1. Spray non-stick cooking spray in a large skillet.
  2. Brown turkey and onion over medium heat until turkey is cooked through and onion is soft, about 10 minutes.
  3. Add tomatoes, tomato paste and seasonings. Simmer over medium heat for 10 minutes.
  4. Add zucchini and cook for 5 minutes more. Serve while hot.
  5. Note: based on a recipe from Champions for Change.

Looks good and I will try. I seen someone ask how much is a serving. It states it's four servings, so I would measure into 4 bowls starting out with a half cup or a cup and that should give you the servings, that's what I'm going to do.

Oh...My God. I just finished eating this for dinner and it was... AMAZING. I was so pleased with the finished product. I served this over brown rice and my father, who usually hates when I try to cook healthy food, just foodgasmed and asked for seconds (sorry for him, there was none left). I will definitely make this again and SOON

This was really easy and tasty. I switched tomatoes and tomato paste for a can of diced tomatoes. Next time I think I'd load it up with a few more green veg :-)

I HAVE MADE THESE SEVERAL TIMES AND IT IS ONE OF MY GO TO RECIPES. IT IS EASY TO MAKE AND EASY TO REHEAT FOR LUNCH AT WORK. I ALSO LIKE THAT I GET A SERVING OF VEGETABLES WITH THIS RECIPE.
