Keto Potato-less Latkes

A keto potato-less latke based off a fathead keto pizza recipe.

Ingredients

Directions

  1. Combine cream cheese and mozzarella in a microwave safe bowl. Heat for 1-2 minutes until partially melted and stir. Microwave again for another minute and stir.
  2. Add half the almond flour and stir. Microwave again for a minute and then add remaining almond flour. Stir until everything is smooth.
  3. When mixture has cooled down a bit, add one beaten egg and stir in until it disappears. Don't add the egg to the mixture when it is really hot or it will cook the egg.
  4. Spoon into a hot oiled pan. Flip when one side is crispy and brown. Plate. Serve with sour cream and hot sauce.
  5. Makes 3 6-7" pancakes.
